The tools must be implemented from 8 December 2023.
 
Does your business have or require a NSW Food Authority licence?
Does your business have or require a NSW Food Authority licence?
Are you handling food for a one off or occasional fundraising event, or to provide free food to the community?
Does your business process and handle unpackaged potentially hazardous food (PHF) and sell or serve it as potentially hazardous ready-to-eat-food?
Is this only slicing, weighing, repacking, reheating or hot holding?

This is a category one business. There are 3 food safety management tools to implement from 8 December 2023:

  1. Food Safety Supervisor – one staff member at each premises needs Food Safety Supervisor certification, and
  2. Basic food handler training – for all other staff who handle food, and
  3. Evidence that proves food safety risks are adequately managed.


It’s important that staff can demonstrate safe food handling practices. Evidence of training, such as a certificate, is not enough.

This is a category two business. There are 2 food safety management tools to implement from 8 December 2023:

  1. Food Safety Supervisor – one staff member at each premises needs Food Safety Supervisor certification, and
  2. Basic food handler training – for all other staff who handle food.

It’s important that staff can demonstrate safe food handling practices. Evidence of training, such as a certificate, is not enough.

One off fundraising events, soup kitchens and other types of food operations that provide food free to the community are exempt from the new requirements.

However, you still need to prepare and provide safe food. You and your volunteers may like to complete our free Food Handler Basics online training – there’s a downloadable certificate at the end.

The new Standard 3.2.2A Food Safety Management Tools does not apply to your business.
 
However, there may be other food safety training requirements for your business and your staff must know how to handle food safely.

The new Standard 3.2.2A Food Safety Management Tools does not apply to businesses that have a NSW Food Authority licence.

This is because licensed businesses must meet the requirements of Standard 3.2.1 Food Safety Programs, which match or exceed those in Standard 3.2.2A.

The existing food safety management program, which is a requirement of the licence, should outline controls that effectively control food safety hazards for the business.
